Oreo Mango Japanese Cheese Cake



Time flies, Christmas has passed. Hope everyone had a great Christmas!

Specially baked this Oreo Mango Japanese Cheese Cake for my beloved husband who pays me the visit this Christmas in Brisbane. I'm indeed in cloud nine and designed for him - his favorite Japanese cheese cake with fresh mango mousse toppings, surrounded it with Oreo cookies & decorate it ribbon. At least, I baked this for ourselves for this Christmas even though i'm quite tired after baking all those Christmas bakes orders in past few days ago.

This bake is my continuous creation from my previous Japanese Cotton Soft Cheese Cake with Strawberry Jam (Paris). Enjoy a slice and cheers.

Angry Birds Seasons: Angry Birds Christmas Cupcakes



6 of these adorable Angry Birds Christmas Cupcakes are specially baked for Lisa Wan's nieces & nephew who are great fans of Angry Birds. She is really doted them so much, and bringing these all the way from Brisbane to Sydney today.

Looking forward to see the photo of them eating these exclusive cupcakes soon. I do hope they will enjoy my masterpiece :)  Look at the Angry Pig who dressed up as Reindeer, it looks like wearing the pink skirt as well.

Forever Friends Xmas Swiss Roll



Forever Friends!! I guess most of the girls will know it for sure. I'm a bit surprised some of the Australians do not know what's Forever Friends. Anyway, this is my first time to make Forever Friends icing figure. It took me about 2 hours to finish the whole bear, indeed quite challenging especially making its facial expression. Thank God  when I first shown to my friends, they do recognized "It's Forever Friends" (not just the normal teddy bear).

Specially dedicated this swiss roll to Anthea & her family who will pay her a visit to Brisbane tomorrow for this Xmas.



Here is some of the Forever Friends' history,
"In 1987, artist Deborah Jones drew the first ever Forever Friends bear in her sketchbook. She approached Bath, Somerset based greeting cards publishers Andrew Brownsword, who agreed to release the bear design as a greeting card. "

Xmas Cupcakes



"Oh no, few more days to Christmas"!! In Australia, Christmas & New Year are really big celebration over here. Believe it or not, there is a Christmas Parade happening every night here.

Back to topic, I've specially designed these Xmas Cupcakes for order. You may notice one of my Hankerie's mascot is one of it too! The pink Hankerie! See my Xmas Cupcakes tower that I built up too below:

These cupcakes are blueberry yogurt cupcakes which decorated using handmade fondant icing as well as nutella jam for the Reindeer. See few more Xmas bake posts in the couple of days later. Wishing you a Merry Christmas & Happy New Year.

Christmas Cake Pops: Holiday cheers on a Stick



1 more week to go for Christmas. It's only matters of time now to prepare all the Christmas bakes. Cake pops — crumbled cake and frosting creamed together, chilled, then dipped into colorful candy melt and decorated. They are the fantastic idea for the Christmas party as people love that they don't have to make a huge commitment. Just a few bites and you've satisfied your urge for something sweet in the party. In terms of the preparation effort, cake pops indeed consume plenty of time.

In the Christmas party, you may expect cutesy pops shaped like a Santa hat to be this season's must-have treats.

Santa Claus Hat Brownies



These adorable Santa Clause Hat Brownies are easy enough to make your own. What you need to have are only the brownies, fresh strawberries & frosting. Decorate it just like Santa Claus Hat, the best idea that you could do it together with you kids for Xmas party preparation.


I baked these brownies with own-cut baking paper, ideas inspired by few of the Australia's cafe here as they do not use any paper cup liner for the muffins/cupcakes but using these baking papers instead. Indeed it's easy to cut and fold it, perhaps I should minimize to buy paper cup liner next time.

Angry Birds Xmas Log Cake (Bûche de Noël)



"Ho! Ho! Ho!! Merry Christmas", Angry Green Pig Santa Claus wishes all the Angry Birds & including yourself! If you know me well, I will definitely design Angry Birds Cake for each of the unique season. For this Xmas, I've spent 2 days to design, bake, made Angry Birds icing figures, assemble & decorate this Angry Birds Xmas Log Cake. It is called Bûche de Noël in French, one of many traditional cakes baked at Christmas which origins from France. The name of this recipe literally translates as "Christmas log," referring to the traditional Yule log burned centuries past. The ingedients suggest the cake is most likely a 19th century creation. That's when thinly rolled sponge cakes filled with cream and covered with chocolate icing. 

This Angry Birds Xmas Log Cake is baked for an exclusive order of Xmas Barbecue party at Brisbane (Australia) yesterday. There are 2 kids and more adults like Angry Birds crazily! The most classic moment was the Baby Lucas's expression when seeing the Angry Birds cake for the first time. It was exactly the same expressions with the Miri's orphans and the kids in the long house that I visited last time. Too bad, it only happened for a short while, not enough time to capture the video!


Due to limited time for baking this order, I only managed to take few of the photos during the baking progress. Recently, I've received quite a fair bit of requests/emails from Hankerie's fans on video tutorial. Well, this is the best that I can do at this moment. Hope somebody can sponsor me for a good video recorder first :P

Tutorial: Assemble Angry Birds Xmas Log Cake
Method:


Step 1: Baked a chocolate swiss roll. If you're lazy, you may buy the ready made or frozen one. (chocolate flavour).

Step 2: Cut the swiss roll diagonally represents branches (1 fairly small & 1 about 20% of the cakes).

Step 3: Assemble them to represent the log wood.

Step 4: Put on the chocolate icing/ganache on top of the swiss roll. I've used the combination of dark chocolate, white chocolate & milk chocolate ganache. Try to use the good brand of chocolate, you will taste the different.

Step 5: Use knife to draw the line that resembles the log as picture below.


Step 6: Make the Xmas tree from fondant icing and put on top of log cake.

Step 7: Sprinkle some icing sugar to represent snow (let it snow, let it snow, let it snow). Put some white chocolate snowflakes onto baking paper. See my previous tutorial on how to make snowflakes from scratch -. Hankerie's 1st time judges for "White Xmas Challenge" in verygoodrecipes.com



Step 8: Make all the Angry Birds, Angry Pigs with Santa Claus & Reindeer dress up. All set!



Everybody enjoys the party, cakes & everything. There goes my Angry Birds Xmas Log Cake, finished in few minutes but I've used 2 days to prepared!! This is just "unfair". Anyway, another of my Angry Birds' master piece.
