Halloween Pumpkin Cake Pops


"Hello from Brisbane!" I've reached at Australia safe & sound yesterday. Thanks to my fans & friends for asking me. Hankerie will be established in Brisbane soon :) so looking forward.

Today is my last Halloween post - Cake Pops. For sure some of you must be wondering are they lollipop or cake? Yes, they are the both combination. Cake pops are basically little smushed balls of cake and frosting (kind of like when you used to smash your leftover cake all in pieces, maybe with some cream/frosting, and eat it as goop). You bake up a cake, let it cool, tear it into fine crumbs, stir in something to hold it all together, and roll it in balls. As easy as that! They're terribly cute, and they're also a great way to use for any party or event. Also, I've used up my leftover fondant icing for the decoration. Alternatively, you may melted some chocolate and coat the cake pop.

Traditional Kueh: Steam Chocolate Egg Cake



Steam Egg Cake or as I used to call them in Hokkien "Kueh Nerng Kor" was one of my favourite childhood snacks if compare to the "Huat Kueh (Prosperity Cake)". I remembered being extremely happy whenever there was a festival. Sometimes my mum steamed these Steamed Egg Cake as prayer offerings. I would only aiming the airy and soft egg cake after praying.

I improvised the traditional normal egg cake with some chocolate chip and cocoa powder into super healthy steam chocolate egg cake. Here is my own recipe.

Ingredients (this recipe yields 4 small cupcakes size)

  1. ½ cup flour
  2. 1 Tbsp unsweetened cocoa powder
  3. 1 tsp baking powder
  4. 1 egg
  5. 3 Tbsp milk
  6. 2 Tbsp sugar
  7. 2 Tbsp vegetable oil
  8. 2 Tbsp chocolate chips

Method
1) Mix & sieve flour, cocoa powder and baking powder.
2) Beat egg with sugar.
3) Add on mil, oil and 1.
4) Put all the chocolate chips and mix well.
5) Steam it for 15 minutes. Remove from the heat and cold it.

Angry Birds Seasons: Angry Birds Halloween


Halloween is around the corner - on this coming Sunday!! For this great festival, I've prepared the specially designed Halloween Angry Birds celebration cake.

By using the black, white and orange color, it represents my Halloween theme for sure. The black represents the dark & stormy night but all these wont stop the Angry Birds to kill the Pigs. If you're one of the Angry Birds fans just like me, then for sure you've played this Angry Birds Halloween series before. They are 30 levels filled with pumpkin patches, exploding jack-o-lanterns, and creepy skeletons, lit by a full moon and eerie lantern light. All these has been demonstrated on my cake except the creepy skeleton due to my cake's space limitation.

Till we meet again - Bye Miri....


Words are so difficult to express my feelings right now, I'm really miss all my Mirian friends here as they always being here with me in these 3 and half years, be it working, friends outside works or even baking together lately. The most touching part is the card, full of the words from the bottom of their heart for me; I actually feel like crying after reading those. All these wonderful time will be remembered vividly from time to time, it's always my best farewell gift - Memories. I've been went through several farewells dinners/lunches in these 2 week, my feeling start to get stronger day by day.

Today I would like to blog about this as besides having farewell dinner, and I also received these 3 lovely cookbooks from Nurliza, Malati, Daphne, Gary, Diana & Jen (of course with my favourite Angry Birds wrappers too). These cookbooks will be contributed greatly into my Hankerie, definitely I will try these recipes and blog about it in the future. Thanks to them and hope our friendship continues even though distance apart.

Traditional Kueh: Self-made Apam Sari Ayu Kueh


Well, at first I would like to pass this month's Aspiring Bakers theme - traditional Kueh. After seeing all my baker's friends so hardworking to submit their wonderful entries, it makes me bake too.

In Malaysia, we have different races, hence you can find wide range of different type of traditional kueh. This Apam Sari Ayu Kueh is my most favourite Malay Kueh as it consists of fragrance of pandan leaves smell and coconut milk. I'm pretty sure you cannot resist too. Here is the secret recipe that I obtained from one of my Malay friend, after Malay language translation :-


Ingredients
1) 3 eggs

2) 240g caster sugar
3) 240 ml coconut milk (if you afraid of cholesterol, substitute this with fresh milk/UHT milk)
4) 1Tbsp pure pandan extract
5) 270g plain flour
6) 1Tbsp Tapioca flour
7)  1 whole coconut rind (only select the white part)
8) Salt for taste

Method
1) Mix & beat eggs with sugar.
2) Add on coconut milk, pandan extract and plain flour. Mix well.
3) Heat up the boiler and prepare all the molds.
4) Mix coconut rind with salt & tapioca flour together.
5) Put no.4 into the mold, press it until tight.
6) Pour the batter into no.5.
7) Steam it for 15 minutes. Remove from the heat and cold it.

Japanese Cotton Soft Cheese Cake with Strawberry Jam (Paris)


In the past, cheesecake has never been my favorite, but after I’ve baked Japanese Cheesecake successfully; I’ve totally fallen in love with it! I love it because it’s light and not so cheesy like normal cheesecakes. Best of all, my husband loves it, that's why I've the energy to experimemt to bake until the most cotton soft cheese cake that he will prefer to.

Japanese cheese cake is yet another wonderful Western-influenced, bakes that evolved with the introduction of foreign imports like dairy cream cheese. Many countries have their own rendition of cheesecake; most are basically custards that are thickened with eggs and sweetened with honey or sugar. The resulting texture is very rich, creamy and dense. This cheesecake is simply perfect for those days when you want a bit of dessert without that overstuffed feeling. It’s light and creamy, with a silky, cottony texture. It also is a little less sugary than most cheesecakes.

Normally the conventional cheese cake is baked in big round shape, I would prefer something different. Hence I made it into small cupcake shapes with my Paris Strawberry jam as toppings and decorate it with rounded fondant icing to resemble red mushroom that you could find in "The Smurfs".


Unlike those types, Japanese cheese cake is light and airy with an almost soufflé-like texture.

For the excess batteshape asked it into round shape, this a cut slice from 9inch round cheesecake with strawberry jam toppings.

AB Overloaded: Angry Birds Birthday Cupcakes


For those who really likes Angry Birds, I guess you wont find bored to find all these creations. Since Iim blogging on Angry Birds series these 2 weeks, these are my exclusive designed Birthday Cupcakes with wonderful cakes texture underneath the decoration. For peeping these inner cakes' texture, see my "Hokkaido Cake" here. I always want to create something that not only nice to see but also nice to eat too :)

You must be wondering why there are only 8 cupcakes here; the reason is Zaliha's boy was celebrating his 8 years' old birthday in past 2 weeks ago. Apologized that I only have some time this week to post it in my blog, she has been looking forward about this post for quite some time. According to her, her boy loves Angry Birds so much. I still remember the comments from her after posted my 1st ever Angry Birds Cupcakes for the orphans; that's why I tried to find time to bake for him by hook and by crook.

Angry Birds Seasons: Female Red Bird Birthday Cake


This is the continue post from my blog yesterday - "1st Ever Angry Birds Birthday Cake". Sophie's 2nd Birthday cake for her birthday celebration in the nursery center. Definitely, she has caught plenty of attention for having 2 big birthday cakes within 2 days time, envy her indeed!

For her 2nd Birthday cake order, I've changed some of the design of this cake, surround it with my handmade icing flowers instead of the ribbon. With the theme of Angry Birds Seasons, I've used most of my time to decorate the most difficult figure - Female Red Bird especially the part of her eyelashes, thinner eyebrows,and wears a yellow bow on the top of her head.

1st Ever Angry Birds Birthday Cake


After 3 months of Hankerie's establishment, this is my first ever BIG birthday cake order as well as my another Angry Birds masterpiece.This is indeed a meaningful work as I'm making this with whole heartily which dedicated to one of my fan here - Yvonne. She is indeed a wonderful mum to give this as special birthday gift for her lovely 3 years old daughter - Sophie Maya. This customized designer cake is specially baked for her. I really admire her daughter so much, totally feel lucky for her as her mum really doted her very much. Back to my old time, the best birthday cake that I have only the normal ice cream cake. Anyway, times changed, it's always lucky to celebrate your own birthday with family, be it with or without cake.

This 9-inchi chocolate moist cake with Angry Birds Fondant icing used up my 2 days to fully complete it. Well, it is not consumed 2 full days, the reason is I need to do few hours after work each day to make it until perfect. Glad that Rachel, all the way from Brunei did the great help to do some figures on the night before. Both of us still baked until 1.30am that night. Now, I realized that I no longer do baking alone, such a nice moment to bake together with your close friends seriously.

Conducting Baking Class - by Hankerie



This is my long awaited session in my life - conducting one and only one baking class specially in Miri here (realization of my "Calling all the Baking Enthusiasts"). Sharing my baking passion, the secret of mastering the baking's basic to those who has the same interest, this is the best ever farewell gift before leaving Miri for good. Undeniably, I can see those baking enthusiasm of all my students, even some of them are beginners. Of course, I hope this spirit can continues in them after I leave later.

9th October was my only weekend to stay back at Miri after my Bario trip. Thank God that there is no delay of my flight back from Bario, else my baking class definitely cannot start on time. Before baking class starts, I've prepared all the required baking ingredients for all my students as well as my Hankerie's recipe. :) For me, I would prefer more interactive session, rather than I'm the one who only do the lecture all the time.


See below for those happy moments throughout this half of the day's baking session.
1.) Everybody busying weighing their required raw materials.



2.) My 2nd session of chocolate cupcakes with cream cheese filling - before sending into oven. Split into 3 groups for this activity, seems like everybody so excited about that. Definitely you cannot find this in any bakery shop!!

3.) After freshly baked from oven, this is our best high tea while serving it hot.


4.) Even the kids would love to learn together too!!

5.) 3rd Group activities - English Scone with raisin & chocolate. 


6.) All lovely mums baked together with their sweetie. Such a wonderful moment to see that too.



7.) Taking the group photo with their own bakes. A successful achievement.

8.) Demo session of Hokkaido Bread with raisin, too bad not enough time to bake it as the proofing time took more than the baking class hours. Brought it to office today for some of the students.

Zombies vs Plants Game featured Cake


One of my Hankerie's fan requested on this special cake for her father. She was saying that her father loves Zombies and plants very much, and she hope can get this featured cake for her father during his birthday this year at KL. Unfortunately, I wont not be at KL during that time. As such, this special cake model was only specially designed for her father virtually :(


For those who do not know what are these ugly creatures - Zombies vs Plants, they are actually a tower defense action game developed and originally published by PopCap Games for iphone and subsequently in Facebook games as well. The game involves a homeowner using many varieties of plants to repel an army of zombies from "eating their brains". In Plants vs. Zombies, players place different types of plants and fungi, each with their own unique offensive or defensive capabilities, around a house in order to stop a horde of zombies from devouring the brains of the residents. The playing field is divided into a number of horizontal "lanes", and with rare exceptions, a zombie will only move towards the player's house along one lane (the main exception is if it has scented a garlic). Most plants can only attack or defend against zombies in the lane they are planted in. Zombies attempt to devour any plants in their way while heading towards the house.

Having fun with these zombies and plants, I will just eat the cake with fondant icing happily :)

I love all these crazy plants (from left - onion, mushroom, tomato, corn, chilly and plant). Tried to make it as scary but in the same time to make it cute too.

Hope this Zombies vs Plants Game featured Cake can be part of any Halloween party too! At least some exotic cake in this unique event this year :)
